My Fabulous Cooking Show: Irish Coffee and Soda Bread

https://www.youtube.com/watch?v=kXh5PzQXIIc&t=70s Irish CoffeeTo ensure the integrity of the ingredients of Irish Coffee, Ireland published an Irish standard in 1988. The original recipe explicitly uses brown sugar and cream that has not been whipped. The coffee is drunk through cream that is floated on top. It's actually easier to use cream that has been slightly whipped so that it doesn't mix with the hot coffee.8 cups freshly brewed coffee6 tablespoons brown sugar12 ounces Irish whiskeyHeavy cream, slightly whippedFill coffee mugs with hot water to preheat; then empty. Pour piping hot coffee into warmed mugs until they are about ¾ full. Add ...

Feeling Kind of Crabby

It's no secret that I'm an Eastern North Carolina girl. I was raised eating vinegar and pepper pork barbecue, fried cornsticks and chicken dumplings. But, I was also lucky to live close enough to the coast to make frequent road trips to Morehead, the Outer Banks and Beaufort – pronounced “Bow-fert.” (I never knew there was a Beaufort -- pronounced “Bew-fert,”until I met my husband, Vince.) I even lived in Wilmington for a few months. As a matter-of-fact, Wilmington is where I began to really love seafood. Until I was in my 20's, most everything that we consumed from the ocean was fried and covered in cocktail sauce or ketchup, mainly fried ...

Dinner on the Deck

The spring weather has been glorious! Vince and I recently took advantage of a cool and breezy Lady's Island evening and invited 20 of our friends over for a grilled salad supper on the deck. Who knew that it would turn into a column?! These are some are some really fun and yummy recipes. The Blooming Pizza Bread was an immediate hit. I suggest serving it with a sharp bread knife, so that your guests can enjoy the bottom of the bread. That's where all of the flavor from the butter and herbs ends up. The Southwestern Grilled Chicken Salad is quick and easy. Serve it with bottled ranch dressing and/or taco sauce. I grilled corn on the cob while I was ...

Mama’s Sourdough Bread

Nothing in the world smells quite like sourdough bread does when it it's baking. My mother was the Queen of Sourdough Bread in my hometown of Wilson, North Carolina. It was her ministry. If someone was sick, she sent them a loaf of her freshly baked bread. If someone had a birthday, she sent them a loaf of her bread. Baptist ministers have preached sermons about her bread. Her bread has even been used for Communion. It was not uncommon to return home from a hospital stay or funeral to find a loaf of Mama's bread, in a handled bag, hanging on your front doorknob. She used to send my Daddy around on Sunday afternoons to make her weekend deliveries. She ...

Feeling Kind of Cheesy

If these yummy-looking sandwich photos have caught your fancy and you're thinking that you might be feeling kind of cheesy, before you even start to read this column, take a stick of salted butter out of the refrigerator so it can come to room temperature. Go ahead and do it. If you don't, when your stomach starts growling and you have to wait, you'll wish you had. I'll explain why later. Recently, I was at the salon with my beloved hair guru, Michael Petorock, and we were talking about one of our favorite restaurants (which shall remain nameless) in the North Carolina mountains. I was telling Michael that when Vince and I lunched there last August, ...

Savory Spinach, Goat Cheese and Peppadew Muffins

These fabulous muffins are made with three of my favorite things. I love spinach, goat cheese and peppadews! Peppadew is the brand name of sweet piquant peppers grown in the Limpopo providence of South Africa. This type of pepper was first discovered in early 1993. It's sometimes described as a cross between a pepper and a tomato because of the resemblance in size and color to a cherry tomato. Peppadews are processed for seed removal, pickled and bottled. The flavor is sweet with mild heat of around 1,177 on the Scoville scale. They may be purchased at gourmet food stores or on the internet. Delicious! Savory Spinach, Goat Cheese and Peppadew ...

Blooming Onion Bread

My brother and nephew were in town for a few days over the Christmas holiday. We all three love to cook and were able to spend some quality time together in the kitchen during their visit. I'd found the recipe for this tasty bread a few weeks ago and was anxious to give it a test. The boys were happy to help cook and to sample the results. Here's our version of the recipe with a few changes and additions. Blooming Onion Bread Wonderful as an appetizer or with a big bowl of beef chili! 1 (16-ounce) loaf sourdough bread, unsliced 16 ounces jalapeno-jack cheese, thinly sliced 1 cup butter, melted 1 tablespoon Dijon mustard 2 teaspoons poppy seeds 1 ...
