These fabulous muffins are made with three of my favorite things. I love spinach, goat cheese and peppadews! Peppadew is the brand name of sweet piquant peppers grown in the Limpopo providence of South Africa. This type of pepper was first discovered in early 1993. It’s sometimes described as a cross between a pepper and a tomato because of the resemblance in size and color to a cherry tomato. Peppadews are processed for seed removal, pickled and bottled. The flavor is sweet with mild heat of around 1,177 on the Scoville scale. They may be purchased at gourmet food stores or on the internet. Delicious!
Savory Spinach, Goat Cheese and Peppadew Muffins
I used mild peppadews for this batch of muffins. Can’t wait to try another batch with the hotter peppadews!
1½ sticks butter
2 (4-ounce) containers crumbled goat cheese
2 cups self-rising flour
1 cup sour cream
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
½ cup chopped peppadews
Preheat oven to 350 degrees. Grease and flour two 12-cup muffin pans. Melt butter in a large saucepan. Remove from heat and add goat cheese, flour, sour cream, spinach and peppadews; stir to combine. Distribute batter evenly in prepared muffin pans. Recipe will make between 15-20 muffins, depending on cup size. Cook in preheated oven for 20 to 25 minutes. Cool muffins in pans for 5 minutes before removing.
