Greek Salad with Grilled Lemon Chicken Thighs

Greek Vinaigrette:
½ cup olive oil
3 tablespoons red wine vinegar
1 tablespoon oregano
1 teaspoon freshly ground pepper
1 teaspoon salt
Put all ingredients in a small jar with a tight-fitting lid. Shake well to combine.

Lemon Chicken Marinade:
5 tablespoons fresh lemon juice
2/3 cup olive oil
2 teaspoons salt
1 teaspoon pepper
2 teaspoons dried oregano
Place all ingredients in a blender or mini food processor and process until emulsified. Baste chicken thighs while grilling.

Quick Tzatziki Sauce:
Greek yogurt
Diced English cucumber
Dried dill weed
Salt and pepper, to taste
Mix all ingredients in a small bowl. Serve atop Greek salad.
