Tuesday Night Supper

What should I cook for supper? Believe it or not, that's an almost daily question at our house. When it's just Vince and me at the dinner table, I'm inclined to try some new ideas. That's what I did on Tuesday. My broccoli salad recipe had originally consisted of broccoli, strawberries, salted cashews and toasted coconut, but when I couldn't find any pretty fresh strawberries, I had to resort to Plan B. Necessity is the mother of invention. It was also a serendipity. The combination of the flavors of the raspberries, pistachios and toasted coconut is fabulous!  Roll out the red carpet! The 9th annual Beaufort International Film Festival is in full swing with film makers, directors, screen writers, movie stars and lots of film-loving fans. Our local film festival is a heatwave of fun and excitement during what is typically a chilly February. This year's festival celebrates all things southern. Easter weekend in the Covington household is full of traditions! We always watch “The Ten Commandments” with Charlton Heston on Saturday night. We always get up extra early on Easter morning to attend the 7am worship service at The Parish Church of St. Helena. And, I always make these two casseroles to accompany our Easter meal. This year we'll be feasting on rack of lamb, sweet potatoes, deviled eggs and poppy seed bread. Another delicious way to prepare one of my favorite veggies! Crunchy Roasted Broccoli Delectable side dish! 2 ounces (approximately 30 pieces) sliced pepperoni 1 clove garlic, minced 1 cup panko bread crumbs ¼ cup plus 2 tablespoons extra-virgin olive oil 2 pounds broccoli, trimmed and cut into log spears 2 tablespoons Dijon mustard Sea salt, to taste Preheat oven to 425 degrees. Process pepperoni slices and garlic in a mini food processor. Add panko and pulse to combine.
