Like many of my friends, male and female, I’m wrestling with an extra 5 pounds that I want to lose. Lucky for all of us, summertime food is the BEST for working on our waistlines. This is my favorite new lunchtime treat! If you’re a calorie-counter, I figure the entire plate of 3 wraps has a total of about 150 calories. Not bad. They satisfied my craving for protein and the crispy lettuce added great texture. Needless to say, tomatoes are mighty tasty this time of year!

 

Skinny Lettuce Wraps with Turkey and Tomato
3 green lettuce leaves, washed and dried
3 slices deli turkey meat
Dijon mustard
1 medium tomato, thinly sliced
Salt and pepper, to taste
Place a slice of turkey on each lettuce leaf. Top each with Dijon mustard and a couple of slices of tomato. Season to taste with salt and pepper. Roll each leaf of turkey and tomato filled lettuce to make a wrap. Slice in half, if desired. Serves 1. (150 calories per serving.)
