I’m still on a quest to find delicious and filling entrees that are low in fat and calories. Turns out it’s not that hard! A tweak here, an adjustment there and I’m coming up with easy-to-prepare meals that are satisfying and won’t further damage my already plump waistline. Skinny Chili contains both beef and turkey. With all of the other spicy flavors going on you don’t even notice the lower fat content. I think the real trick is to skip the cheese and sour cream on top.

Skinny Chili
Low fat and only 280 calories per serving!
1 pound ground round
1 pound ground turkey
1 medium onion, diced
1 (28-ounce) can diced tomatoes, undrained
1 (14.5-ounce) can diced tomatoes, undrained
1 (10-ounce) can Rotel diced tomatoes and green chilies, undrained
2 (15.5-ounce) cans light kidney beans, undrained
2 (15.5-ounce) cans dark kidney beans, undrained
2 (8-ounce) cans tomato sauce
1½ cups tomato ketchup
3 (1.25-ounce) packages chili seasoning mix
Place beef and turkey with diced onion in a Dutch oven. Do not add oil. Cook over medium heat until meat is brown and onion is tender. Remove meat mixture from Dutch oven and drain thoroughly on paper towels.  Rinse Dutch oven with warm water and return to stove top. Place tomatoes, beans, tomato sauce, ketchup and chili seasoning in Dutch oven; add drained meat-onion mixture. Cook chili over medium heat, stirring often until warmed through. Makes approximately 18 cups, 1 cup per serving.

Skinny Taco Salad makes use of leftover Skinny Chili. This is one of the most satisfying entree salads that I’ve ever eaten! There’s just enough cheese melted on top of the chili to take care of your cheese cravings and the crunch from the Skinny Tortilla Strips more than make up for the lack of fried corn chips on top. 

Skinny Taco Salad
Only 430 calories per serving!
3 cups torn green leaf lettuce
1 cup Skinny Chili
1 tablespoon shredded cheddar cheese
5 grape tomatoes, sliced
Chopped green onion
Pickled jalapeno slices
½ cup fresh salsa
Skinny Tortilla Strips
Place lettuce in a salad bowl. Add 1 cup Skinny Chili. Sprinkle with shredded cheese, grape tomato slices, green onion and jalapenos. Garnish with Skinny Tortilla Strips and serve with fresh salsa. Serves 1.

Skinny Tortilla Strips
Only 45 calories per serving!
4 (6-inch) flour tortillas
Olive oil cooking spray
Sea salt
Slice tortillas into ½-inch thick strips. Spray a baking sheet lightly with olive oil cooking spray. Place strips evenly on prepared baking sheet. Spray tortilla strips lightly with olive oil cooking spray and season with sea salt. Bake in a preheated 425 degree oven for 8 to 10 minutes or until tortilla strips are golden brown. Store leftover strips in a tightly sealed container. Serves 8.
