Sunday Pot Roast
1 (2½-pound) chuck roast
1 (10.75-ounce) can cream of mushroom soup
1 package dry onion soup mix
1 white onion, quartered
Baby new potatoes
Baby carrots
Button mushrooms, halved
1 bok choy, cut into bite-sized pieces — include greens
Mix cream of mushroom soup with dry onion soup mix. Place roast in bottom of crockpot. Top roast with soup mixture. Cover crockpot and cook on high for 2 hours. Uncover, and add vegetables. Toss to combine. Cover and cook for 90 minutes more or until roast and vegetables are tender. Serves 4.
