Disclaimer: Before I get a load of comments saying that this isn’t real bbq, let me begin by saying that I agree. I wish I could make the delicious slow-roasted, pit cooked pork bbq that we used to eat in Wilson, North Carolina. This recipe is for the home cook. It’s an easy way to cook tender and juicy pork. And, thanks to Scott’s Barbecue Sauce  from Goldsboro, NC, it’s about as close to home as I can make it down here in Beaufort, SC.

This super-easy recipe needs no written instructions. All you need is a 6-pound bone-in pork shoulder, salt, pepper, water and your favorite bbq sauce. I prefer North Carolina-style vinegar and pepper sauce. The meat is tender, juicy and delicious.
