Sweet and Sour Okra
Choose whole pods of okra that are small and tender. Larger pods tend to be tough and woody.
1 teaspoon vegetable oil
¼ cup apricot preserves
¼ cup white wine vinegar
36 small okra pods
Salt
Heat a medium saucepan over medium heat; add oil and apricot preserves; stir until melted. Stir in vinegar; bring to a simmer. Add okra; season with salt. Cover and reduce heat to medium-low. Simmer for 15 to 20 minutes or until okra is tender. Serve at room temperature. Serves 6.
