The spring weather has been glorious! Vince and I recently took advantage of a cool and breezy Lady's Island evening and invited 20 of our friends over for a grilled salad supper on the deck. The spring catering season has been a whirlwind of annual meetings, cocktail parties and weddings. Even though I'm around food almost all of the time, I often get sidetracked and skip lunch. I recently discovered flatbreads in the deli section at Publix. They've been lifesavers for me! Flatbreads are low in calories and are quick and easy to prepare. I love the fiery taste of super-spicy buffalo chicken wings and I love blue cheese – what a great combination! Determined to stay away from fried foods while still enjoying some of my favorite flavors, I drew inspiration from a taco pizza that I sampled last weekend and created this delicious recipe.
