Lemon Lava Cake 

This favorite recipe comes together in a jiffy and never fails to impress! As it bakes, the cake rises to the top creating layers of moist cake and saucy lemon pudding.

1 (18.25-ounce) package lemon cake mix

2 cups milk

1 cup water

¼ cup lemon juice

Zest of 1 lemon

2 (3.4-ounce) packages lemon instant pudding

1/3 cup sugar

2 tablespoons powdered sugar

Preheat oven to 350 degrees. Prepare cake batter as directed on package. Pour into greased 9×13-inch baking dish; set aside. Pour milk, water and lemon juice into a large bowl. Add lemon zest, dry pudding mixes and 1/3 cup sugar. Beat with wire whisk until well blended. Pour evenly over cake batter. Place baking dish on a rimmed baking sheet to catch any sauce that might bubble over sides of dish as dessert bakes. Bake for 55 to 60 minutes. Cool for 20 minutes before serving. Sauce will thicken slightly as it cools. Sprinkle with powdered sugar. Spoon into serving dishes and serve warm. Serves 12.
