Parmesan Crusted Mayonnaise Chicken

4 boneless, skinless chicken breasts

Salt & pepper

1 cup mayonnaise

1 teaspoon Italian seasoning

½ teaspoon garlic powder

1 cup grated parmesan cheese

Preheat oven to 350 degrees. Spray a baking dish with cooking spray. Season chicken breasts on both sides with salt and pepper and place them in prepared dish. In a small bowl, mix mayonnaise with Italian seasoning, garlic powder and grated parmesan cheese. Using a spatula, spread the mayonnaise mixture evenly over the chicken breasts to cover completely. Bake chicken for 35 to 40 minutes or until an instant read thermometer reaches 165 degrees. If the crust begins to brown too quickly, cover the chicken lightly with a piece of aluminum foil. Let chicken breasts rest for 5 minutes before serving. Serves 4.
