Shrimp Rolls

1½ pounds medium shrimp, peeled and deveined

2½ cups shredded mozzarella cheese

¼ – ½ cups olive oil

1 green onion, chopped

1 tablespoon dried oregano

¼ – ½ teaspoon garlic salt

5 sausage rolls or sub rolls

Preheat oven to 350 degrees. Line a baking sheet with aluminum foil and spray lightly with cooking spray. Cook shrimp in boiling water until just pink. Remove, drain and place in a large bowl. Add shredded mozzarella cheese. Toss with olive oil. Mixture needs to be wet but not soggy. Stir in green onion, dried oregano and garlic salt. Mix well to combine. Place rolls on prepared baking sheet. Fill rolls with shrimp mixture. Drizzle with olive oil, if desired. Bake in preheated oven for 20 minutes or until cheese is melted and bread is slightly toasted. Serves 5.
