Poppy Seed Chicken

You can prepare this yummy chicken dish from start to finish in less than an hour.

5  cups cooked shredded chicken

1 (4-ounce) can mushrooms stems and pieces, drained

1 cup steamed broccoli florets

1 (10 1/2-ounce) can cream of chicken soup

1  cup sour cream

1 (2-ounce) jar diced pimentos, drained

1 stick salted butter, melted

1½  sleeves (approximately 1⅓ cups) crushed butter-flavored crackers      

2 teaspoons poppy seeds

Place shredded chicken in a large mixing bowl. Stir in mushrooms, broccoli, soup, sour cream and pimentos. Mix to combine. Spoon mixture into a greased 2-quart baking dish. Combine melted butter, crushed crackers and poppy seeds in a small bowl or zip-top baggie. Sprinkle cracker mixture over the chicken. Bake in a preheated 350 degree oven for 20 to 30 minutes until heated through.
